Operational Evaluations

The Operational Evaluation is the first phase of RCI consulting services.

The purpose of the Operational Evaluation is to perform an assessment of the restaurant’s concept, products, level of service, operating systems and financial performance to identify problem areas, assess profitability potential, and to set a course of direction to attain the desired objectives. The evaluation includes concept evaluation, facility evaluation, product evaluation, an overview of concept definition, and financial analys. RCI may suggest a more detailed investigation in certain areas that have raised concern.

The scope of the Operational Evaluation is of a general nature. It is an opportunity for the evaluation team to experience your operation first hand and become familiar the organization and the culture of the food service operation. The evaluation includes a facility evaluation, product evaluation, an overview of concept definition, management and staff, management systems and a financial analysis.

At the completion of the evaluation, RCI will generate an Operational Evaluation Report that will describe the findings. The report will include a prioritized list of recommendations on strategies to address the objectives. RCI may suggest a more detailed investigation in certain areas that have raised concern.

RCI will work with the operator and the management team to plan and implement the other phases of our consulting services to attain the desired performance and profitability objectives.
